Reserve 'Catherine's Block' Gewurztraminer 2022

Picked two weeks later than the rest of our Gewurz, the fruit for our Catherine Reserve was very ripe and full at harvest with the berries bursting with flavour and sugar. The berries were handpicked and whole bunch pressed to give a very luscious juice that was then wild fermented.

Fermentation was only allowed to continue for fifteen days before being stopped with the aid of severe chilling and filtration, leaving 68grams per litre of sugar in the resulting wine.No filtration or fining agents* were used to ensure the delicate flavours of the variety are preserved.

*Fining agents are protein based compounds used to reduce the level of phenolics in the wine so it is vegan friendly.
