The fruit was hand picked over at the end of February. It was then whole bunch pressed and cold settled over a two day period (without the use of enzyme). The clarified juice was then racked and allowed to undergo wild fermentation in a mix of new and old barrels. The resulting wines were blended and filtered before bottling in November.Â
