Reserve 'Polly's Block' Chardonnay 2022

Whole bunch pressed. Fermented with wild yeasts.. Minimal intervention. Unfiltered. Vegan friendly.

  • 100% of this wine was fermented in oak barrels with 50% of those barrels being new French oak and the remainder being one year old. 
  • The wine spends 12 months in its barrels on yeast lees and is stirred every two weeks to aid in extracting flavour from the yeast.

We have always found that of all our Chardonnay blocks, one in particular always stood head and shoulders above the rest and from 2012, when we first produced a Reserve Chardonnay, we decided to keep this block separate for barrel fermentation. In 2013 this block was renamed Polly’s Block named for David and Catherine’s daughter Polly.

As always the fruit from Polly’s block was hand picked and then whole bunch pressed to retain the purity of the fruit. The juice was put directly to barrels in a mixture of new and one year old French oak and was then allowed to undergo wild fermentation with our indigenous yeast population.

When fermentation was complete the wine was left in barrel to mature for twelve months with each barrel being stirred every two weeks to encourage the development of yeast characters in the final wine. No filtration or fining agents* were used to ensure the delicate flavours of the variety are preserved.

*Fining agents are protein based compounds used to reduce the level of phenolics in the wine so it is vegan friendly.
