This sparkling wine is made by the traditional methods where the fruit is whole bunch pressed and the resulting juice is fermented into a base wine. This base wine undergoes secondary fermentation in bottle to give the wine its “sparkle” and is then riddled to remove the yeast and the yeast is disgorged and the bottle is corked again
