Our Devils River is a blend of Cabernet Sauvignon (65%), Merlot (23%), Malbec (10%) and a small touch of Cabernet Franc (2%) which is a classic Bordeaux blend. These Varieties are all picked and fermented with the aid of wild yeast. During ferment they are pumped over three times a day to extract maximum flavour and tannin profile. It is then pressed off and racked to a mixture of barrels both old and new (40% new) and French and American oak (50/50). The resulting wines are then blended and bottled without fining or filtration to ensure the delicate flavours of the variety are preserved.

*Fining agents are protein based compounds used to reduce the level of phenolics in the wine so it is vegan friendly.
