Picked in Late February the fruit for this wine was handpicked from our Sauvignon Blanc blocks out at the front of our cellardoor. It was whole bunch pressed and cold settled to give a roughly clarified juice. The juice then went through a 100% wild ferment. The resulting wine was matured in large old oak barrels and then bottled with a minimum of filtration and no use of fining agents*.

*fining agents are protein based compounds used to reduce the level of phenolics in a wine meaning it is vegan friendly.
