Like all our Estate wines this gris is Bio dynamically grown and made without the use of synthetic sprays or enzymes in the winery with 100% wild yeast. Whole bunch pressing gives juice that is low in skin colour and phenolics yielding a juice (and subsequent wine) that is pure in its fruit character. During fermentation 30% of the wine was transferred to old French oak puncheons to and then matured in this oak for 8 months prior to being blended back.
This ripe Pinot Gris has the typical fruit characters of ripe pears that are common from Delatite’s fruit but also with a riper stone fruit character in the background and some floral notes. The palate is full and round with a hint of residual sweetness and a long finish.
FOOD Enjoy with seafood with a hint of spice (salt and pepper squid is a great example) or stir fried vegetables.
CELLARING Perfect for drinking now but it will age well for eight years allowing the oak flavours to further integrate and making the wine more savoury.
