The fruit for this wine was hand-picked two weeks earlier than for our table wine to ensure a higher level of acidity and tight, fresh fruit flavours. The fruit was whole-bunch pressed and cold fermented to retain its pristine characters.
The base wine was then tiraged into its bottles to undergo a traditional secondary ferment, then aged on its lees in the bottle for two years. This allows it to pick up bready, nougat characters from the yeast. Finally the wine was clarified by hand riddling and disgorged to remove the yeast lees, leaving a naturally brilliant, clear sparkling wine.
This unique wine is wonderfully pale in colour and fresh on the nose, showing grapefruit and musk aromas. On the palate it is fresh and zingy with the expected rose water flavours that you would expect from Gewürztraminer as well as some lovely crisp citrus characters. The bead and mousse is fine and persistent, helping to lift the wine.
