The fruit from our three different blocks of Pinot Noir are fermented separately using different techniques for each including whole bunch fermentation and Carbonic Maceration but all are fermented in open fermenters to encourage maximum colour and flavour extraction. Each batch is kept separate and matured in French oak barrels (35% new) before being blended and prepared for bottling. No filtration is used to ensure the delicate flavours of the variety are preserved.
This wine has wonderful ripeness of fruit with black cherry and plum flavours and plenty of sweet generous oak character backing up the palate. The tannins are firm and masculine in character coating the tongue with a silky sensation. The finish is generous with the sweet smoky oak combining well with the ample fruit flavours.
FOOD Enjoy this Pinot Noir with the classic Pinot accompaniments like duck and other richer gamey meats.
CELLARING It will perfectly accompany dinner tonight or it can be carefully cellared for a special occasion in 15 years of more.
