The Cabernet for this wine is sourced from Donald’s Block (planted in 1968/69) whilst the Merlot was planted in 197. These bio dynamically grown block yields fruit with small and intensely flavoured berries that is the integral component of this wine.
The hand-picked fruit was crushed and fermented by wild yeast in open vessels with the skins being punched down three times a day to extract maximum flavour, colour and tannin. Once fermentation was complete, the wine was left on its skins for an additional ten days to further extract structural tannins before being pressed and matured in new French Oak Hogshead barrels for twenty months. The resulting wines (cabernet 75% and Merlot 25%) were then blended and bottled without any fining or filtration.
Our inaugural Donald’s Block Cabernet Merlot has a warm cigar box nose with some herbal influences from our cool climate Cabernet layering through to violets and dark berry fruits. The palate has hazelnut oak notes at the front with dark fruit in the mid leading to a fine spicy finish with mouth coating velvety tannins.
FOOD Enjoy this wine with full flavoured dishes such as venison.
CELLARING This wine can age for ten to twenty years to encourage the dusty earth-like characters that a cool climate aged Cabernet Merlot can offer.
