This is the first Tempranillo that we have produced from our Estate grown vines and 2015 proved to be a great year for Tempranillo with warm even ripening throughout the season providing us with perfect fruit.
This wine was wild fermented in open vessels for eleven days, with plunging carried out three times a day. It was then pressed off in our basket press and matured in a mix of old and new barrels (50% new) of both French and American oak. It was blended and bottled without any use of fining agents and without filtration to maintain its pristine flavours.The aromas of this wine are slightly smokey with blackberry aromatics coming through. The palate is spicy with elements of tar and sweet oak flavours with ripe blackberry washing over the tongue. The structure is firm with mouth coating tannins and a fine oaky finish.
FOOD Enjoy with smoked meats/salami, soft cheese or Tapas.
CELLARING This wine will impress while young but will mellow with age giving spicy and mushroom characters over ten – twelve years.
